ok i made amazing vegan cinnamon rolls today, but my ((non-vegan)) roomies and i ate them all up before i could snap a picture! time for batch #2...

anyway here's the recipie:

dough:

3/4 cup of whole wheat flour
3/4 cup all purpose flour
1 tablespoon of baking powder
1 tablespoon of brown sugar
3 tablespoons of vegetable oil
1/2 cups of orange juice
1 teaspoon of vanilla

combine flour, baking powder, and brown sugar. add oil, mix with a fork until small lumps form. combine orange juice and vanilla, and then add to dough. mix until moist, knead dough with hands and shape into rectangle. cover liberally with cinnamon, sugar, and brown sugar ((you can also add pecans, or raisins, or whatever else you like in your rolls. put in as much as you want)). roll lengthwise and slice into 8-10 pieces. place on cookie sheet, and flatten slightly with the palm of your hand. cook at 350 for 12-15 minutes.

frosting:

1 cup of confectioner's sugar
1/8 cup of water
2 tablespoons of soy milk
1 teaspoon of vanilla
1 1/2 cups of margarine

combine sugar, soymilk, vanilla, and half of the margarine. slowly add the water and remaining margarine, while mixing the frosting with a beater. you may have to add more sugar/butter/water depending on the sweetness and consistancy that you like.. i just kind of played around with it until it tasted good. put the frosting in the fridge for an hour or so for it to get firm. spread over hot cinnamon buns, let cool, and then add more! i've already had like four today, they're fabulous :)
