Chocolate Fudge Pie
+ 12 oz soft tofu
+ 1 C cashew butter
+ 1 tsp vanilla
+ 1 Tb cocoa powder
+ 1/8 tsp cinnamon
+ 2 C chocolate chips
+ 9" pie crust <-- I found a surprisingly vegan shortcake style one
1) Combine the tofu, cashew butter, vanilla, cocoa powder, & cinnamon in a food processor. Blend until smooth.
2) In a double boiler melt the chocolate chips.
3) Add melted chocolate to tofu mixture and blend again until smooth.
4) Pour into pie crust & smooth out the top. Chill 2-3 hrs before serving.
