Garden Tofu Wraps
6-8 Vegan spinach tortillas/wraps
1 lb. of tofu
2 T of orange or apple juice
2 T of braggs or soy sauce
3/4 cup of nutritional yeast
1 whole tomato - diced
1 whole cucumber - diced
Lettuce and/or fresh spinach
Press and drain the tofu thoroughly. Cut into 8 strips and then cut each strip into 8 "nuggets".
Mix the oj, braggs & nut yeast. Stir in the tofu til evenly coated. Bake on a greased cookie sheet for 15 minutes or until "dry" looking.
Spread each wrap with veganaise. Spoon on equal amounts of cucumber, tomato and a handful of greens.
Divide baked tofu evenly between wraps. Roll up and enjoy!
