Chicago Diner Nut Milk French Toast

I got the Chicago Diner Cookbook for Christmas and I've been making several recipes. Here's one that turned out really well. Not much compared to the actual diner's french toast, but if you haven't been there, you don't know what you're missing :P



Serves 2 - 3

1/4 Cup raw cashews, sunflower seeds, almonds, or walnuts
1 2/3 Cup hot water
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon vanilla extract
pinch salt
1/4 cup sweetener of your choice
2 tablespoons oil
4 to 6 bread slices (I used 8, I think it depends on the size of your bread)

Soak the nuts in hot water for 15 minutes; drain. Blend the soaked nuts with the water, cinnamon, nutmeg, vanilla, salt, and sweetener in a blender until smooth. Pour the mixture into a shallow dish.

Heat the oil in a large skillet over medium heat. Dip the bread slices into the mixture, and cook each side until golden brown. Serve hot with maple syrup, applesauce, or your favorite fruit sauce.

This was really easy, simple ingredients, and really good. The only problem I had was my skillet isn't large enough and I had to cook 2 slices at a time so it soaked up a lot of the oil and I had to use more than 2 tbsps. So seriously, use a big skillet!
