soft-yet-firm caramely sauce?

Hi everyone - I'm a long-time lurker, but this is my first post. My boyfriend's birthday is coming up, and I want to make him a spectacular cake. Vegan, of course. He wants chocolate with chocolate frosting, which I can do no problem, but I want to put something other than just more frosting between the layers. I was thinking maybe a caramel-type substance, but I'm not exactly sure how to make one that's firm enough that it won't leak out all over the place but also soft enough to cut and eat without breaking your teeth. Any ideas?

ETA: I don't have a candy thermometer, so this may not fly. In that case, any ideas about what I could schmear between the cake layers that would be extra-delicious?
