Hi, all....
I know there has been a lot of talk about egg replacements in the past. I, being the crappy vegan baker that I am, still do not know what replacements is appropriate for what dish, so I was hoping you guys could help me out.

I have

Peanut Butter Fingers (from mother)

1 C. flour
1 C. rolled oats
½ C. granulated sugar
½ C. firmly packed brown sugar
½ tsp. baking soda
¼ tsp. salt
½ C. margarine, softened
1/3 C. peanut butter
½ tsp. vanilla
1 egg
6 oz. (1 cup) semi-sweet chocolate chips

Combine all ingredients except chocolate chips, mixing until it resemble coarse crumbs. Press into the bottom of a 13x9 pan. Bake 15-20 minutes, until golden brown.

Sprinkle with the chocolate chips. Let stand 5 minutes, then spread melted chips evenly over the crust.

Mix 1/3 C powdered sugar, 2 Tblsp peanut butter, and 3-5 Tblsp milk together. Pour over chocolate layer. Let cool fully and then cut into bars.

What do you think would be the best egg replacement in this case?
