Tiger Cake





Chocolate Cake

1/2 cup soft soy margarine
1 tablespoon Vinegar
1 cup soy milk
1 2/3 cup unbleached white flour
2/3 cup unsweetened cocoa powder
1 1/2 cups sugar
1 1/2 teaspoons baking soda
1 teaspoon salt
3 "eggs" (I used Ener-G Egg Replacer)
1 teaspoon vanilla
1/2 cup water
1 animal-shaped pan (I got mine at a craft store, it's in the shape of a bear)

Put vinegar in cup and add soymilk. Preheat oven to 350 degrees F. Grease pan (can also be 2 round layer pans). Place flour, cocoa, sugar, baking soda and salt in a large bowl and mix with a spoon. Add margarine, vanilla, soured soy milk, 1/2 cup water, and egg replacer to dry ingredients. Mix with electric mixer or whisk until smooth. Pour into prepared pan/pans. Bake for about 45 minutes in animal pan, or about 35 minutes in round pans.

Light Orange Frosting that didn't come out as orange as I had hoped...
-This recipe was modified from Kittee's pink frosting recipe, with orange juice substituted for beet juice.

4 cups powdered sugar
1/2 cup soy margarine
1/2 cup shortening
1 tsp salt
1 tsp vanilla extract
2 1/2 tablespoons orange juice

Mix together sugar, margarine, shortening and salt. Beat in vanilla. Beat in orange juice.

Chocolate Frosting

1/4 cup soy margarine
1/4 cup cocoa powder
4 tablespoons soy milk
5/6 cup sugar
1 teaspoon vanilla extract

Combine all ingredients except for vanilla extract in a saucepan and bring to a boil, stirring constantly. Boil for 1 minute. Remove from heat and beat until cold. Add vanilla.
