i adapted a recipe that my pal emma gave me so that it was vegan friendly. most of my little adaptations are rather ill fated but these turned out positively amazing!


2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/8 teaspoon baking soda
11 tablespoons margarine
1 generous cup of sugar
1 heaped tablespoon of egg replacer
3 ounces of "toffuti" imitation cream cheese
1 teaspoon vanilla extract
1/2 of a lemon squeezed (or a whole lemon if you want these to be a little bit more tangy)

1. whisk the flour, salt, baking powder, and baking soda together
2. on medium speed beat the egg replacer, sugar, and margarine together on medium speed, add about 2 tablespoons of water.
3. gradually add the "cream cheese", vanilla, and squeezed lemon.
4. when relatively well blended, stir this mixture into the flour mixture
5.on parchment paper, shape dough into a 2inch by 12inch log
6. wrap parchment paper around the dough and twist the ends
7.freeze for 2 to 3 hours
8. preheat over to 375 degrees
9. cut log into 1/2inch -1inch wide cookies
10. cook for 7 to 11 minutes
