This will make 12 small-ish cookies.
1 1/2 cups oats
2 tablespoons cocoa
1/4 cup ground flax seeds
1/4 cup wheat germ
1 cup sugar
1/4 cup canola oil
1/4 cup non-dairy milk
1/4-1/2 cup peanut butter
1) Mix the oats, cocoa, flax and wheat germ together in a good size bowl, set aside.
2) Mix the sugar, oil and milk in a saucepan and bring to a boil. Cook for one minute and take off the heat.
3) Add the peanut butter and stir well. Pour over oatmeal mixture, mix well. Drop by spoonfuls on wax paper, cookie sheet or whatever you have handy. Let cool in the fridge. They'll take a while to completely firm up.
Note: The amounts of flax and wheat germ are approximate, as I just kinda threw some in to soak up some of the excess moisture. I think they'd probably come out just fine without either one if you don't want to add them.
