roasted sweet pepper pasta and mint chocolate mousse

i made up the pasta sauce. roasted peppers and tomatoes then pureed in a food processor.


and mint chocolate mousse from the chicago diner cookbook.


it's basically melted chocolate chips, food processored with soy milk, tofu, maple syrup and mint extract.
