225 ml water
225 ml rice wine vinegar
1/2 a jalapeno pepper
2tsp red pepper flakes 2 shallots, sliced thinly
3 ripe mangoes
1. mix all the ingredients except the mangoes in a large saucepan, bring to the boil and allow to cool.
2. peel and slice the mangoes, and then mix into the ginger mixture. cover and store in the refrigerator.
