tropical mango-ginger chutney

I found this recipe in an old book about naturally healthy foods. this is supposed to aid digestion, and lower the rsk of heart disease.

225 ml water
225 ml rice wine vinegar
200g sugar
175g ginger
1/2 a jalapeno pepper
2tsp red pepper flakes 2 shallots, sliced thinly
3 ripe mangoes

1. mix all the ingredients except the mangoes in a large saucepan, bring to the boil and allow to cool.
2. peel and slice the mangoes, and then mix into the ginger mixture. cover and store in the refrigerator.
