marinated tofu with peanut rice noodles

not only was it DELICIOUS, but this was a very easy and relatively quick recipe to make. the tofu is really good, and should get crispy and golden brown (although mine was left in a bit too long) and it goes great with the peanut noodles!


*slice tofu into .5 inch thick pieces, press for 30 min. or so, marinate for a few hours (i just made it in the morning and left it in the fridge all day). when ready, batter and fry in a small amount of oil for a couple min. on each side.

1.5 tsp garlic
2 T soy sauce
1.5 tsp rice vinegar
1 tsp miso
1.5 tsp brown sugar
1 tsp sesame oil
(and i would have added ginger if i had some)
*saute the garlic in a with a little sesame oil, then add the miso to the pan to soften it up a little...add the vinegar and sugar and soy sauce...keep it on heat until the sugar had dissolved. pour over pressed tofu

2 'eggs' worth of egg replacer
.5 T soy sauce
1 T corn starch
*you can really add anything to this batter for taste...let the egg rep. get frothy, then add soy sauce and corn starch (make sure your liquids are cold)

peanut sauce:
1.5 T smooth peanut butter
.5 tsp rice vinegar
1 T soy sauce
.5 tsp Sriracha
*i mixed these ingredients in a warm pan (left from the noodles), and added cooked rice noodles to incorporate the sauce.

i served the tofu as well as some steamed veggies over the peanut noodles.
