Goddess Mother Granola

From my Co-op Newsletter:

Goddess Mother Granola

6 cups oats
1 cup wheat germ
1/4 cup vegetable oil
3/4 cup liquid sweetener like brown rice syrup (original recipe called for honey)
vanilla to taste
shredded coconut
nuts and/or seeds (almonds, pecans, walnuts, sesame seeds)
dried fruit - cut into small bits (papaya, pineapple, raisins, etc)

Preheat oven to 250 F

In a large bowl combine the oats, wheat germ, and nuts or seeds. In a saucepan heat oil, honey and vanilla. Combine both mixtures and pour onto two sheet pans. Cook for 20-45 minutes depending on how crunchy you like your granola. Be sure to stir every 10-15 minutes to achieve an even color. Add shredded coconut 5 minutes before granola is done baking. Remove from oven and transfer to a large bowl. Add dried fruit and mix until evenly distributed. Store in large, covered jars to keep on hand for as long as several months.
